On Monday, May 8th, the Gardening Club at Capstone Day Habilitation baked sweet treats using wild dandelions! Participants collected the yellow petals from the flowers and added them to a batter to make shortbread cookies with dandelion and honey. After the cookies were baked and everyone tried one, a small group began moving pea seedlings from inside to outside to get used to the temperature before planting. The garden is already starting to flourish, with peppermint, chamomile, lettuce, garlic, and wildflowers sprouting up! The gardening club has also created a compost bin behind the Oneonta Campus, which will be used in the garden!
